A word from Cave de France: The Charles de Saint-Céran first seduces with its bright pale yellow color, adorned with fine persistent bubbles. The elegant and expressive nose reveals refined notes of white flowers and citrus, enhanced by an exotic touch and subtle aromas of white-fleshed fruits, such as apple and pear. On the palate, the effervescence is delicate and the attack crisp, giving way to a balanced, fresh, and light structure. The harmonious and airy finish highlights a well-controlled dosage of approximately 8 g/L and a moderate alcohol content of 11.5%, guaranteeing excellent drinkability. This wine can be enjoyed as an aperitif or a cocktail base, as well as an accompaniment to fish, seafood, or white meats. It reveals its full finesse when served between 6 and 8 °C.

The result of meticulous expertise, this sparkling wine benefits from controlled low-temperature fermentation, followed by a slow secondary fermentation in the cellar and aging on lees with delicate bâtonnage. Gentle filtration and discreet dosage perfect its winemaking, preserving its aromatic expression and natural freshness.

Founded in 1901 in Seyssel, in the Ain department at the heart of Savoie, Varichon & Clerc embodies one of the oldest and most important houses specializing in sparkling wines produced using the Traditional Method. For over a century, it has strived to produce cuvées faithful to their terroir, combining authenticity, elegance, and consistent quality.

Recognition came in 1942, with the official recognition of the Seyssel appellation d'origine contrôlée (AOC), the first French AOC dedicated to sparkling wines after Champagne. Varichon & Clerc, then a major player in this appellation, contributed to highlighting its emblematic grape varieties: Altesse, for its freshness and floral notes reminiscent of alpine nature, Molette, and Jacquère, renowned for its forest floor aromas.

In 1996, strengthened by its historical roots and recognized expertise, the house joined forces with the Boisset Family, who immediately recognized the uniqueness and quality of its wines. This alliance allowed Varichon & Clerc to perpetuate its pioneering spirit, while asserting its status as an ambassador of Savoie's sparkling wines.
