Its power, breadth and length make it one of the best we've had the chance to taste.
Ideal, of course, with the famous coq au vin jaune, it also goes well with hard cheeses, Beaufort or Comté, lobster or Asian cuisine.
A word from Domaine Baud: Savagnin, its sole grape variety, is the jewel in the crown of our vineyard, and is found almost exclusively in the Jura region. It draws its maximum expression from our grey and blue marls. A grape with a hard, thick skin, it is the last to be harvested on the eve of the first frosts. Its high sugar and acidity content allows for very original winemaking and ageing methods.
This Savagnin is aged for 6 years and 3 months in oak barrels. A powerful, full-bodied wine, developing aromas of green walnut, hazelnut, almond and even truffle and curry. A round and balanced finish rounds off the palate with the aromas detected on the nose. Its structure makes it an unforgettable wine.
Served at 16°C, it will enhance all your dishes based on fresh cream, mushrooms, as well as exotic and spicy dishes. Superb with pan-fried foie gras, magnificent with coq au vin jaune and morels, lobster à l'armoricaine or grilled lobster. It is the perfect accompaniment to a long-aged Comté cheese.
Its legendary cellaring potential can last up to a century.
