A word from Cave de France: Integrated into our cellar since 2010, Domaine Le Mont has established itself as our "flagship reference" in Côteaux du Layon.
Claude Robin is a renowned winemaker, professional and consistent in the production of his wines, typical of the appellation. A sweet white of great finesse, sweet but not "syrupy", the perfect balance between richness and lightness! The honey notes are enchanting and make it the ideal companion for foie gras as well as chocolate desserts. An original pairing, it will also be appreciated with more exotic cuisine, Chinese noodles and curry dishes.
A word from the winemaker: The beautiful pale gold color of our Coteaux du Layon reveals an intense and complex nose. You will find an association of acacia honey, floral aromas and candied fruits. Its palate will seduce you with its roundness and fruity taste. Long and supple, you will also appreciate the freshness of this wine, and the persistence of its fresh fruit notes.
Our Coteaux du Layon is the least sweet of our 4 dessert wines. The vines used for its production are over 50 years old. The harvest is entirely done by hand, through successive selections. It is done when the grapes have reached over-ripeness, and the sugar concentrates in the fruit.
Coteaux du Layon is produced from the Chenin Blanc grape variety. The terroir extends over 20 communes in Maine-et-Loire, which border the Layon, a tributary of the Loire. To reveal these specific aromas of Coteaux du Layon, the vines need a ventilated exposure, to favor early vegetation, and thus obtain overripe harvests.
