Its power, breadth, and length make it one of the best we've had the chance to taste.
Ideal, of course, with the famous coq au vin jaune, it will also accompany hard cheeses like Beaufort or Comté, lobster, or even Asian cuisine.
A word from Domaine Baud: Savagnin, which is its sole grape variety, is the jewel of our vineyard, and is found almost exclusively in the Jura region. It draws its maximum expression from our grey and blue marls. A grape with thick, hard skin, it is the last to be harvested on the eve of the first frosts. Its sugar and acidity levels are very high, allowing for very original winemaking and aging methods.
This Savagnin is aged for 6 years and 3 months in oak barrels. A powerful and well-structured wine, developing aromas of green walnut, hazelnuts, almonds, and even truffles and curry. A round and balanced finish completes the palate with the aromas detected on the nose. Its structure makes it an unforgettable wine.
Served at 16°C, it will enhance all your dishes made with crème fraîche, mushrooms, as well as exotic and spicy dishes. Superb with pan-fried foie gras, magnificent with coq au vin jaune and morels, lobster à l'armoricaine or grilled lobster. It perfectly accompanies a long-aged Comté cheese.
Its legendary aging potential can extend up to a century.
