This bourbon stands out for its local approach and its respect for American traditions, while adding a unique Californian touch. Made from a carefully selected blend of grains, often comprising corn, rye, and malted barley, it is meticulously distilled and aged to offer rich and balanced flavors.
Resulting from a double distillation carried out in direct-fired pot stills, this creation pays tribute to the founders of the Californian Sonoma distillery, who thus salute the heritage of their ancestors. They were among the first to distill yellow corn in the American West, laying the foundations for a tradition that is still alive today.
This straight bourbon, enhanced by a new mash bill recipe, gains in robustness and character. While corn remains predominant, it is sublimated by a clever blend of rye, wheat, and malted barley. The result offers a rich, powerful, and deeply aromatic profile. Dominant notes of corn and biscuit harmoniously intertwine with those of new oak. A complex palette unfolds, combining warm spices (ginger, clove, nutmeg), juicy stone fruits (apricot, peach), as well as gourmand nuances of vanilla and liquorice.
