A note from Cave de France: At the heart of the Saint-Émilion appellation, Clos des Menuts presents itself as a wine for ageing, simultaneously round and structured, supported by fine and silky tannins. Its deep colour testifies to a controlled extraction.
The nose opens with aromas of ripe fruit, enriched with toasted and delicately vanilla nuances from the ageing process. On the palate, the balance is confirmed: the texture is ample, harmonious, with a beautiful persistence that combines power and refinement.
The Clos des Menuts is cultivated using sustainable practices, attentive to the natural balance of the vine and the preservation of the soils. No herbicides are used, and mechanical tilling of the soil promotes microbial life and deep rooting. This environmental and qualitative requirement is part of the HVE3 certification, obtained in 2019, attesting to a high level of environmental performance.
Vinification begins with manual harvesting accompanied by particularly rigorous sorting, supplemented by an optical sorting system to retain only perfectly healthy and ripe berries. The grapes are then vinified in temperature-controlled concrete vats, at a moderate temperature, to preserve the aromatic purity and the finesse of the fruit. During the first days of fermentation, two to three pump-overs are carried out daily to precisely extract colour, aromas, and tannins, seeking balance rather than excessive power. Ageing continues for eighteen months in French oak barrels, harmoniously distributed between one-third new barrels, one-third one-wine barrels, and one-third two-wine barrels, which brings complexity, structure, and elegance without masking the expression of the terroir.
The estate, run by the Rivière family in the heart of the village of Saint-Émilion, relies on sustainable viticulture and careful vinification with ageing in oak barrels, seeking to combine local tradition with the fine expression of the clay-limestone terroir typical of the appellation.
