A word from Cave de France: We had great pleasure discovering the iconoclastic vintages of Charles Perez, who describes himself as "a bit of a winemaker, a bit of an artist, a bit of a boss." From our point of view, he is first and foremost a winemaker, and a good one at that!
This classic vintage is powerful, with a dark, inky color. It offers gourmet aromas dominated by licorice, plum, and then candied fruits. Charles Perez rightly mentions a hint of eucalyptus that brings a touch of freshness. I would add a touch of green pepper. The palate is thick but not heavy. A wine with character, full of southern warmth, which will accompany Mediterranean dishes, a nice grilled piece of beef, a charcuterie board, a Provençal daube, feathered game...
