Madagascar
A note from Cave de France: Malagasy aged rum, aged approximately 5 years (full aging with finish in cognac barrels) bottled at 40% alcohol. It first rests in oak barrels using the traditional method, which gives it woody notes, roasted coffee, and vanilla, before being refined for several months in old cognac barrels to gain roundness, aromatic depth, and length on the palate. When tasted, it is characterized by an amber color, a delicate nose combining vanilla and aromas linked to cognac, a soft and balanced palate often evoking caramel, chocolate, and spices, and a persistent and warm finish where spices and sweetness blend harmoniously.
The Dzama distillery is an iconic brand from Madagascar, created in the early 1980s by Lucien Fohine on the island of Nosy Be. Initially a producer of spirits from Scottish whisky barrels, the company quickly grew to become the main player in the rum and spirits market on the island, with a significant local market share and international distribution. Dzama traditionally uses local raw materials (sugar cane) and aging in various barrels (including ex-whisky and ex-cognac) to give its rums a unique aromatic complexity, taking advantage of the aromatic influences of the Malagasy terroir.
