A word from Cave de France: Cihuatan Indigo 8 Year Old is a rum from El Salvador, we could even say THE ambassador rum of El Salvador! Produced by the Cihuátan Distillery, made from local sugarcane molasses then distilled in a column still, it ages for at least eight years in American oak barrels that previously contained bourbon. This aging in a tropical climate gives the rum a beautiful aromatic amplitude and a warm texture.
Its color is amber, sometimes described as luminous or “light gold,” with warm reflections. On the nose, it offers a soft and seductive palette: hints of vanilla, sometimes caramel or chocolate, sweet spices, and often more original accents of citrus or lemongrass, which bring an exotic freshness.
On the palate, Cihuátan Indigo is generally smooth and accessible, with a rather round texture. It reveals gourmet flavors - dark chocolate, cream, sometimes notes of exotic fruits or honey - mixed with woody and slightly toasted nuances.
The finish, rather elegant and persistent, reveals hints of vanilla, nuts, sometimes caramel or cocoa, which gives it a warm and mellow character.
This rum is distinguished by its balance between sweetness, gourmet notes, and subtle complexity, making it a good candidate for neat tasting - ideally at room temperature in an appropriate glass - but also for elaborate cocktails.
