A word from Cave de France: This 18-hectare estate has the particularity of owning a monopoly hill, whose calcareous soils are among the oldest in the appellation. It goes without saying that we are dealing here with an authentic product of this terroir, which expresses its style perfectly. Crystalline robe with green reflections, beautiful mineral tension, aromas of white fruits and subtle notes of 'gunflint'... a high-level Pouilly Fumé in a very elegant bottle!
Pairs well with fish and shellfish, goat cheese, fine charcuterie, smoked salmon, andouillette...
For the record, the denomination "fumé" (smoked) comes from the bloom that covers the ripe grape, a grey powdery layer that evokes smoke.
