A note from Cave de France: This 18-hectare estate has the particularity of having a monopoly over a hill whose limestone soils are among the oldest in the appellation. In other words, we are dealing with an authentic product of this terroir, which perfectly expresses its style. Crystalline color with green reflections, beautiful mineral tension, aromas of white fruit and subtle notes of "gunflint"... a high-quality Pouilly Fumé in a very elegant bottle!
Pairs well with fish and shellfish, goat cheese, fine charcuterie, smoked salmon, andouillette...
For the record, the name "fumé" comes from the bloom that covers the ripe grapes, a powdery grey layer that evokes smoke.
