A word from the Winemaker: Discover this delicious red wine with a Protected Geographical Indication from the Loir Valley, Cuvée Anthocyane, from Domaine du Four à Chaux, in Thoré-la-Rochette. Its name comes from anthocyanins, which are natural pigments found in grape skin and are responsible for the color of red wines.

Winemaking: The grapes are harvested and destemmed before an eight-day fermentation in vats. At the beginning of the vatting period, the harvest is heated to 27°C to facilitate the extraction of color and tannins. The blending of the two grape varieties is carried out after malolactic fermentation. Finally, this wine is aged for 12 months in oak barrels.

The Cot, known as Malbec in Cahors, provides a beautiful concentration and an intense, dark red color, hence the name of the cuvée to illustrate the pigmentation of the grape. Ripe black fruits are complemented by notes of vanilla and spices from barrel aging. A fleshy and dense wine with assertive tannins that soften beautifully with time, with a lovely persistence on the palate.
