ORGANIC Wine
Its power begins on the nose with an intoxicating scent of rose. With a full-bodied and spicy attack and a good dense and harmonious structure. A full-bodied, complex wine, with aromas of flowers, exotic fruits (lychee) and spices (pepper, clove).
Food/wine pairings: spicy dishes, sweet and savory dishes, strong cheeses (Fourme d'Ambert, Roquefort, Munster).
Ages 7 years.
All work is done by hand. The lunar calendar dictates our tasks. In the cellar, fermentations are carried out with indigenous yeasts and we avoid the use of sulfur as much as possible. Our 17 hectares are cultivated according to the principles of organic and biodynamic agriculture (winemakers' notes).
