Notes from Winemaker Dominique Norguet: Discover this delicious red wine from the Coteaux du Vendômois appellation, "Cuvée Tradition," from Domaine du Four à Chaux, in Thoré-la-Rochette. This red wine is round, easy-drinking, and subtly peppery, made from vines cultivated with controlled yields and unique intergenerational know-how.
Vinification: The grapes are destemmed before an eight-day fermentation in vats. At the beginning of the vatting period, the harvest is heated to 27°C to facilitate the extraction of color and tannins. The blending of the three grape varieties is carried out after malolactic fermentation.
Tasting Notes: Brilliant ruby color. Aromas of black fruits with a hint of licorice. Smooth attack and well-integrated tannic structure, enhanced by subtle notes of violet, blackcurrant, and spices. A delightful and easy-drinking red wine, classic of the appellation.
Food Pairings: It pairs pleasantly with grilled red meat, blanquette de veau (veal stew), and hard cheeses such as lightly aged Comté.
