The vines used for its production are over 50 years old. The harvest is entirely done by hand, through successive selections. It is done when the grapes have reached over-ripeness, and the sugar concentrates in the fruit.\u003cbr\u003eCoteaux du Layon is produced from the Chenin Blanc grape variety. The terroir extends over 20 communes in Maine-et-Loire, which border the Layon, a tributary of the Loire.
