It takes place when the grapes have reached over-ripeness, and the sugar concentrates in the fruit.\u003cbr\u003eCoteaux du Layon is produced from the Chenin Blanc grape variety. The terroir extends over 20 communes in Maine-Loire, bordering the Layon, a tributary of the Loire.
