A word from Cave de France: A Chinon with firm, non-aggressive tannins, where red berries, especially raspberry and cherry, predominate. The mineral notes, typical of Chinon, delight the palate. The wine is fine, delicate, but not without personality. It will accompany white and red meats, charcuterie boards, and I recommend it with Caen-style tripe (tested and approved!)
A word from the Winemaker: The slopes of the Chinon plateau, with their clay-siliceous soils, benefit from sunshine favorable to grape ripeness. This is where a vineyard of Cabernet Franc thrives. The vinification is natural and the aging lasts one year in oak barrels.
